The potato ranks first among the world`s most important food crops. In many countries, including those of Europe, America, and Canada, potato is the staple food. Potato is now one of the staple foods in Bangladesh. It’s harvesting time in our country during February-March. In Bangladesh, potato is primarily used as a vegetable, although in many countries of the world it constitutes the staple food and contributes more than 90% of the carbohydrate food source. The principal use of potatoes is to make potato curry along with fish, meat, and eggs, there exists a great diversity in the consumption of potatoes.
