This is a Tres Leches Cake at Tartine Manufactory in the Mission District of San Francisco. It`s a very popular and trendy dessert these days, although it`s been around for a while, especially in Latin American communities. Essentially it`s a sponge cake layered with condensed milk, evaporated milk, and cream. Condensed milk and evaporated milk are widely used in Hispanic and Filipino households going back to the days when most of them couldn`t afford to have refrigerators to keep fresh milk. Thus, the Tres Leches Cake evolved from these humble beginnings.
