Moroccan woman working with argan nuts. To extract the seed core, the seeds are hand-split using stones. Attempts to automate the process failed. Due to the hardness of the shell and its irregular shape as well as the delicacy of the nucleus. With automatic splitting, many delicate seed nuclei are destroyed and some of the shell remains in the testicles and hinders further processing. This is by no means an easy job, as the arganii seed shells are by some sources even 16 times harder than hazelnut. The seeds are then segregated.
