Description
Traditional dish of Galicia. The dish consists of a whole cooked octopus in pots, preferably of copper. To soften it must first be beaten and then immersed several times in boiling water. Once cooked, cut into oblique rings of about 1 cm., Sprinkled with sweet paprika much better `Pimentòn de la Vera dulce` and salt of the Camargue, with the addition of boiled potatoes. All sprayed with abundant ex virgin olive oil. It should be served on a wooden cutting board in Spain in terracotta cocottine from which the diners serve using wooden sticks
