Description
Wagyu means Japanese beef. Wa means Japan and gyu is beef. The term is not a particular breed of beef but means beef produced in Japan. Wagyu comes from particular breeds of cows that have long been raised in Japan. The most common is the Japanese Black which accounts for most of what is sold and marketed as Wagyu. The cow is fattened before being slaughtered for the market resulting in a very marbled and tender beef with decadent fatty flavors. These are different cuts of A5 highest grade Wagyu imported from Japan, which includes the rare Hokkaido snow beef on the upper left corner and the Takamori drunken Wagyu fed with sake lees on the bottom right corner.
