Old maple trees tapped for sap in the old fashioned way. The sap starts running in late winter. Buckets of sap are boiled down over many hours to produce a msch smaller amount of maple syrup. Depending on the quality of the end product, it takes 40 or more gallons of sap to produce one gallon of syrup. This stand of maples is located in Lee, Berkshire County, Massachusetts
