Description
While the tapioca plant is known for its root which is a main food staple for over 500 million people, the palm-like leaves are also edible, containing higher amounts of both protein and valuable nutrients than the root. The raw leaves are, however, toxic and must be boiled for at least 15 minutes in total to effectively remove harmful glucosides. Tapioca leaves have a mild, bland flavor, similar to spinach.
