Spiny lobsters (often referred to as Langostino lobsters), the ones caught in the Caribbean which are warm water lobsters. They are prized mainly for their meaty tails. I cooked my lobster tails in butter (and a little olive oil) and chopped garlic and herbs. On low fire with the butter sauce basted over the top so as to thoroughly cook the meat inside the shell. Naturally beautiful and garnished with mango slices and fresh basil.
