Ting Zai Porridge means `Congee On The Boat` which reflects the origin of the Cantonese recipe when the dish was prepared and eaten on the boats out in the sea. The version shown here in Singapore incorporates slices of fresh fish as the main ingredient, with cuttlefish, peanuts, green onion, shallots and ginger, as well as a generous helping of deep-fried youtiao or dough.
