This unappetizing phenomenon is actually due to a chain of biochemical reactions known as ââ¬Åenzymatic browning.ââ¬ÂàWhen anàappleàis injured or cut into pieces, the plant tissue is exposed toàoxygen. This triggers anàenzymeàknown as polyphenol oxidase to oxidize polyphenols in the appleââ¬â¢s flesh.
