Pecans are the edible nut of the Carya illinoiensis which is a member of the Hickories. Pecans are a good source of calcium, magnesium, and potassium, which help lower blood pressure. Most of the fat found in pecans is a healthy type called monounsaturated fat. Activation is what occurs when raw nuts have been soaked in a salt water solution for a period of time â usually a minimum of 7 hours and up to 24 hours. This soaking stimulates the early germination and sprouting process within the nut (or seed, legume or grain). This makes gives them a higher nutritional value.
