Pempek dough is made from a mixture of boneless ground fish meat, most commonly tenggiri (wahoo), with water, salt and sago flour. Sometimes, people also add a little bit of cooking oil and or wheat flour to improve the texture and to make the pempek not too chewy, they also add MSG to enrich the umami taste
