Bialys are bagel relatives with a depression in the center instead of a hole. The depression is typically filled with a onion and or poppyseed mixture. Unlike bagels, bialys are baked not boiled which gives them a chewier texture. They are named for their place of origin, Bialystock Poland and were brought to the United States by eastern European jewish immigrants in the early 1900s. They are popular in New York City.
