mutton dry fry is a popular mutton recipe made with, whole spices, onions, tomatoes, spices and coconut cooked til it is dry and thick . mutton sukka is also known as mutton chukka which is a dry and spicy masala coated mutton. ingredients: 1 tbsp ginger paste1 tbsp garlic paste½ tsp turmeric powder1 kilo mutton. 3 tbsp oil2 onions, finely chopped. Salt 2 star anise1 tbsp cumin seeds2 bay leaves2-3 tbsp oil1 inch cinnamon stick15 black peppercorns1 black cardamom¼ cup coriander seeds1½ cups grated coconut2 tbsp sesame seeds1 tbsp khas khas, 3 tbsp chopped coriander leaves½ lemon. Green masala paste. 3 tbsp oil2 inch ginger. 10 garlic cloves3 onions, Salt 3 tomatoes, 1 cup fresh coriander leaves2-3 tbsp oil3 medium onions, finely choppedSalt¼ tsp turmeric powder2 taps Kashmiri red chili powder. Slice the onions, and the tomatoes. heat ghee, add bay leaf, black peppers, green cardamoms, cloves, cinnamon stick. Sauté for 2-3 minutes , add ginger ,garlic, cumin seeds, mustard seeds paste. Saute till the raw smell of ginger garlic goes . add sliced onions, sauté till the onions are nicely fried and golden brown. add the mutton pieces. Cover and cook . add salt, mirchi powder, turmeric powder, and mix well. Add tomatoes, a cup water, close and cook for 15 minutes. Once mutton is tender it is done, sauté it nicely on high heat for 5 minutes . Add green chilies, and coriander. Let the mutton cook till any water that is left has dried completely.
