Brazilian food: Beiju, also known as Tapioca (cassava starch pancakes). Made just with cassava starch, water and salt, they are eaten spread with manteiga da terra (golden coloured butter obtained by boiling cream, top right). Beiju is a typical Amerindian food, particularly popular in the Brazilian north-eastern semi arid region.
