“Kilawing Kambing” is grilled and pickled goat meat with skin and liver that is spiced up with pepper, salt and chopped onions. The soft meat of a “Cabrito”, a Spanish word for a goat which is six to nine months old, is the best meat for Kilawing Kambing. Preferred cuts are from the thigh, loin, neck and shoulder of a young female goat. The meat of an adult goat is also referred to as “Chevon”, this could be tougher and needs to be boiled first to tenderize before grilling.
