The soft meat of a ââ¬ÅCabritoââ¬Â, a Spanish word for a goat which is six to nine months old, is the best meat for Kilawing Kambing. Preferred cuts are from the thigh, loin, neck and shoulder of a young female goat. The meat of an adult goat is also referred to as ââ¬ÅChevonââ¬Â, this could be tougher and needs to be boiled first to tenderize before grilling.
